When hunger strikes it is always best to be prepared with healthy snacks that are filling and will put any temptations at bay. The below recipes keep well, therefore you can make a big batch and keep them in your fridge for whenever you”re feeling a wee bit peckish. The best part is that they”re healthy enough for the whole family to enjoy. Include these in your kids lunch boxes instead of their usual desert… no need to tell them it”s good for them!
Avocado Fudge Balls
Ingredients:
- 1 avocado, ripened
- 1/2 cup coconut oil
- 1 tsp vanilla
- 1 cup cocoa
- honey or maple syrup to taste
- unsweetened shredded coconut
Once coconut oil is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!
Return mixture to saucepan over very low heat and add the rest of the ingredients,except the shredded coconut.
the mixture should be thick. Form into balls then roll into cocount. Put in freezer.
