Eating carbs without the “carbs”?
SPAGHETTI & meatballs?
SURE!! …get rid of the starch and make it with spaghetti squash!!!
Our girls devoured it!!
A bit o’ lemon juice/olive oil/oregano emulsion on top to make it a wee bit more like my Greek ancestors!
Easy to do:
cut a spaghetti squash in ½ and core out the middle
sprinkle each side with sea salt, crackled pepper, and brush with olive oil
Place them face down on parchment paper in the oven and bake at 350F for about 30-40 minutes or until they get really soft.
From there, scrape the softened spaghetti squash with a fork to get the “spaghetti” out
Place on a plate and dress with your favourite meatball recipe and sauce
