GOT 17 MINUTES? Yes…you DO!

Orange Citrus Salmon with zucchini pasta!

Here is a quick and super easy way to make a salmon supper when pressed for time: 

  • 1 big piece of salmon (i buy more so I can have leftovers in salads)
  • Sea salt
  • Crackled black pepper
  • OJ (with pulp and some tangerines)
  • Zucchinis
  1. Place salmon in a big zip lock bag with orange juice and tangerine pieces…let the marinade take for a few hours the night before
  2. When ready, set the oven to 385F and place the salmon piece in a baking dish along with the  marinade (you can drizzle some agave or pure maple syrup for a bit more taste)
  3. Sprinkle with salt and pepper and place in the oven for about 15 minutes
  4. In the meantime, with a potato peeler, peel the zucchinis so that you get lots of strips.
  5. Place the strips in a pan either with garlic butter or coconut oil for about 2-3 minutes until the zucchinis have a small sear on them.
  6. VOILA! ENJOY!

Delicious and in about 17 minutes
