The below recipes keep well, therefore you can make a big batch and keep them in your fridge for whenever you\u00a0\u00bbre feeling a wee bit peckish.&nbsp; The best part is that they\u00a0\u00bbre healthy enough for the whole family to enjoy. Include these in your kids lunch boxes instead of their usual desert&#8230; no need to tell them it\u00a0\u00bbs good for them!<\/p>\n<p><strong>Avocado Fudge Balls<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 avocado, ripened<\/li>\n<li>1\/2 cup coconut oil<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1 cup cocoa<\/li>\n<li>honey or maple syrup to taste<\/li>\n<li>unsweetened shredded coconut<\/li>\n<\/ul>\n<p>Once coconut oil is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!<\/p>\n<p>Return mixture to saucepan over very low heat and add the rest of the ingredients,except the shredded coconut.<\/p>\n<p>the mixture should be thick. Form into balls then roll into cocount.
